Chocolate Cake

Chocolate cake can make your life better. No I'm not kidding. It really can. I went from having the week from hell to feeling pretty damn good about things and Chocolate Cake was smack dab in the middle of the transformation. Of course this is no ordinary cake. Some chocolate cake is deceptive. It lures you with its wonderful smell and luscious chocolaty look only to find its dry and dull and not very chocolaty at all. This cake is not like that. Its moist and wonderful and tastes like heaven. I have made it on numerous occasions and it is amazingly easy and good. Every time.

I include the recipe so that others can experience the miracle too. :)

Chocolate Mayonnaise Cake

3 eggs

1/ 1/3 cup sugar

1 tsp vanilla

1 ¼ tsp baking soda

¼ tsp baking powder

2/3 cup unsweetened cocoa

1-cup mayonnaise

2 cups flour

1 1/3 cup water

Grease and flour 2, 8 inch round pans or one 13x9 inch glass pan. Preheat oven to 350 degrees. Blend the three eggs thoroughly in a large bowl with a beater on low speed. Add sugar and beat thoroughly, add vanilla, baking soda and baking powder. Again beat thoroughly. Add cocoa, beat, add mayonnaise, beat, add one-cup flour, beat and scrape sides of bowl, add one-cup water, beat, add second cup flour, beat and scrape sides of bowl, and 1/3 cup water, beat. Pour into prepared pans and bake in preheated oven for 30 to 35 minutes or until a toothpick inserted in center comes out clean.

Cool completely and frost with Cream cheese frosting.

Cream Cheese Frosting

1 8oz package cream cheese

1 Tablespoon milk

1-teaspoon vanilla

4 ½ to 5-½ cups confectioners' sugar

Cream the cream cheese; I microwave it for a few seconds to get it soft. Beat in milk. Continue to beat adding one cup of sugar at a time till you feel its sweet enough.

Enough for 2, 9 inch rounds
